4 Lobster rolls or hot dog buns
1/4 C melted unsalted butter or margerine
1/3 C homemade or good quality mayonnaise
1 T White Truffle oil
2 t fresh lemon juice
1/2 t salt
1/2 t fresh ground pepper
1/4 C celery-minced
2 T shallots-pressed
2 T fresh chervil-minced
1 T fresh parsley-minced
1 t chives-chopped
1 pound freshly cooked lobster tail and claw meat, cubed and cooled
Preheat the broiler.
Brush roll inside and out with butter. Place on baking sheet under broiler till warm and toasty.
In a bowl, combine the mayonnaise, truffle oil, lemon juice, and S & P, mix well. Fold in the celery, shallots, chervil, parsley, and 1/2 chives. Fold in the lobster meat. Place on warmed buns top with a squeeze of fresh lemon and 1/2 chives you have left and enjoy!
