Number of Servings: 4
- 8 oz ground turkey
4 1/2 cups romaine lettuce
- 1/4 cup red kidney beans and black beans each
1/4 cup Monteray Jack or cheese substitute
1/2 cup finely chopped vidalia onions
- 1/2 julienne red pepper
- 4 oz tortilla chips
- 2T fresh cilantro chopped
- 1/2 t each cumin and crushed red pepper flakes 1 t chili powder
- 1/2 C corn
- 2 tbsp salsa, sour cream if desired
- Sea salt if desired
Brown turkey and then add seasonings, cool. Toss together beans, corn, red pepper strips and onions. Add 1/2 cheese and lightly toss. Toss in with lettuce. Place turkey on top then reserved cheese.
Crush tortilla chips and add to the top of the salad.
Add salsa and sprinkle cilantro and enjoy!
