Try this Delicious Non alcoholic Cocktail, from Food and Wine Cocktails 2013, Grapes of Redemption
Serves 3 to 4
30 Concord Grapes
3 oz Vanilla Simple Syrup
1 oz Lime Juice
12 oz Chilled Club Soda
In a mixing glass, muddle grapes with the Vanilla Simple Syrup and lime juice. Fill a chilled rocks glass with crushed ice and add soda, leave 1/3 glass empty, top with more crushed ice then grape mixture
The Mint Julep-Must prepare portions a day aheadIngredients
4 C Your Favorite Bourbon
2 bunches fresh spearmint or use Orange-Mint for a Fresh twist
1 C Water, preferably distilled
2 C Honey for a fun flavor combo or 1 C Granulated Sugar for a traditional flavor
To prepare mint extract, remove about 40 small mint leaves. Wash and place in a small bowl. Cover with 3 ounces bourbon. Allow the leaves to soak for 15 minutes. Then gather the leaves in paper toweling. Thoroughly wring the mint over the bowl of whisky. Dip the bundle again and repeat the process several times.
To prepare simple syrup, mix 2 C honey (1 c granulated sugar) and 1 C of water in a small saucepan. Heat to dissolve sugar. Stir constantly so the sugar does not burn. Set aside to cool.
To prepare mint julep mixture, pour 3 1/2 cups of bourbon into a large glass bowl or glass pitcher. Add 1 cup of the simple syrup to the bourbon.
Now begin adding the mint extract 1 T at a time to the julep mixture. Each batch of mint extract is different, so you must taste and smell after each tablespoon is added. You are looking for a soft mint aroma and taste-generally about 3 tablespoons. When you think it's right, pour the whole mixture back into the empty liter bottle and refrigerate it for at least 24 hours.
To serve the julep, fill each glass, a silver mint julep cup, 1/2 full with shaved ice. Insert a spring of mint and then pack in more ice to about 1" over the top of the cup. Then, insert a straw that has been cut to 1" above the top of the cup so the nose is forced close to the mint when sipping the julep.
When frost forms on the cup, pour the refrigerated julep mixture over the ice and add a sprinkle of powdered sugar on top and serve.
Choose good sized mushrooms, about 2 inches across. When cleaning mushrooms, don't run them under water. They are like little sponges, and will absorb it; just wipe them clean with a damp towel. The filling can be made with fresh, canned, or imitation crab meat. If using canned, be sure to rinse it first.
Prep Time 25 minutes. Cook Time: 15 minutes. Ready in: approx. 40 minutes. Yields 6 servings.
1 lb Button or Baby Portabella, Large size
7 oz Crab Meat
2 Green Onions, Sliced thin
1/4 t Thyme
1/4 t Oregano
1/4 t Pepper, Fresh Ground
1/4 C Parmesan cheese, Grated
1/2 C Mayonnaise
1/4 t Paprika
1/2 t Louisiana Hot Sauce
1/2 Lemon, juiced
Preheat the oven to 350 degrees F (175 degrees C).
In small bowl combine Lemon Juice and Crab Meat. Set aside for 30 minutes.
In a medium bowl, combine crab meat, green onions, herbs and pepper. Mix in mayonnaise, Louisiana Hot sauce and 1/4 cup Parmesan cheese until well combined. Refrigerate filling until ready for use.
Wipe the mushrooms clean with a damp towel. Remove stems. Spoon out the gills and the base of the stem, making deep cups. Discard gills and stems. Fill the mushroom caps with rounded teaspoon or two of filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Parmesan and paprika.
Bake for 15 minutes. Remove from oven and serve immediately.
