Approximately 12 servings at 2 per serving, 140 Calories
1 Baguette loaf cut into 1/2" (1.25 cm) slices
2 5 (10 ml) Butter or Margerine
1/2 C (125 ml) Onion, Finely chopped
1 Garlic Clove, Minced
1 Pack 9 oz (270 gl) frozen Spinach, thawed, chopped and squeezed dry
1 Pack 8 oz (240 gl) Light Cream Cheese
1/4 C (50 ml) Red Peppers, Roasted chopped
1/2 C (125 l) Cheddar Cheese, Shredded
Place baguette slices on baking sheet. Bake at 375° (190°C) for 4 to 6 minutes, or until toasted Set Aside
Melt butter in 10" (25 cm) skillet over medium heat. Add onion and garlic. Cook and stir 2 to 3 minutes, or until softened. Add Spinach. Cook and stir 30 to 60 seconds or until warm. Cool Slightly.
Place cream cheese in mixer bowl. Turn on low and beat for 30 seconds, add spinach mixture.
Continuing on low speed add red peppers and beat 30 to 60 seconds until combined. Spread on baguette slices. Top each slice with ab
out 1 t (5 ml) Cheddar Cheese. Bake for 5 to minutes or until thoroughly heated and cheese is melted. If you prefer bake in a buttered casserole dish until thoroughly heated. Serve warm.
