6-8 ounce Package of your favorite Tortellini or make your own fresh!
3 T Parmesan or Goat Cheese Crumbles on top (if desired)
Kosher Salt and Fresh Ground Pepper
1 C Broccoli Florets
8 Cherry Tomatoes halved
1 6 ounce jar Artichoke Pieces
2 T Fresh Basil, chopped
2 T Fresh Parsley, chopped
2 Green Onions, chopped
1/2 C Your Favorite Zesty Italian Salad dressing
Cook Tortellini according to package directions and rinse. Set aside.
Combine the last 7 ingredients, fold in Tortellini, and Parmesan, and Sprinkle with Salt and Pepper. If using goat cheese crumbles sprinkle on top right before service.
Cover and chill for up to 8 hours before service. Perfect for make ahead light dinner this summer.
