1 Romaine Leaf
1 Chicken Breast, slice thin
1 Tomato, slice thin
1/2 C Head Red Cabbage, grated
1 Avocado, small dice
1/2 Lime, juiced
1 Arugula leaf, for each wrap
4 Slices Bacon, cooked and crumbled
Dressing recipe below
Place lettuce leaf on a plate. Layer with Chicken, Tomato and Cabbage.
Use a Pestle and Mortar to smash avocado add lime juice. Spread onto the tomato. Sprinkle on bacon pieces and drizzle on a light amount of dressing, roll up.
Wrap rolled leaf the opposite direction around the roll.
Roll up and secure with a toothpick.
1 T Agave syrup or Honey
1/2 C Olive oil
Juice from one lime
1 t Ancho chile powder
2 t Chipotle chile powder, divided
Sea Salt and fresh ground pepper, to taste
Place juice, honey and spices in bowl. Whisk in Olive oil.
