Did you know that Iodine Deficiency is the number one cause of preventable Mental Retardation and linked to Autism? Iodine is also critical in bio synthesizing our food into nutrients that are usable.
4 oz Crab meat
1/4 oz Wakame, dried
1 Cucumber, preferably Japanese Cuke, sliced thin
2 T Sake
4 T Rice Wine Vinegar
1 t Sesame Seeds, toasted
1 t Sea Salt
2 T Low Sodium Soy sauce
2 T Sesame oil
Pepper to taste
Soak Wakame in water till soft, drain. Place cucumber in bowl, sprinkle with salt and mix well. Slice cucumber thin and put it in a bowl, sprinkle salt and mix well. When the salt makes cucumber limp, wring the liquid out of the cucumber and place it on top of Wakame. Place Soy Sauce and Rice Wine Vinegar in bowl, whisk in Sesame Oil and pepper. Add Crab. Pour over Wakame. Sprinkle with Sesame Seeds. Toss and serve.
If you decide to examine your Iodine levels, I would recommend a simple patch test. Just take a tincture of Iodine and place on your arm for about 8 hours. If the tincture is absorbed, then you are deficient. If you are seriously concerned about your levels, I would recommend scheduling a consultation with a Naturopathic Doctor. They will be able to test your levels and advise on how much to supplement. This is especially important because, you can develop Iodine toxicity (a build up of Iodine in the Kidneys).
